- 2 tablespoons maple syrup

Preparation
Step 1
To make the apple compote, place the apples, maple syrup, cinnamon and 2 tablespoons of water into a saucepan over medium–high heat. Cover, bring to a gentle simmer and allow to cook for 15–20 minutes until softened. Mash roughly with a fork or potato masher. Remove from the heat and leave to cool.
Step 2
To make the pancakes, place the flour and coconut sugar into a large bowl, whisk to combine and remove any lumps. Pour in the soya milk and oil; whisk to combine, being careful not to overmix.
Step 3
Place a frying pan over medium–high heat and add a spoonful of coconut oil. Once melted, add spoonfuls of batter, about 3 tablespoons per pancake. Allow to cook for 3–4 minutes, until bubbles begin to appear on the surface, then flip over and cook for a further 3 minutes on the other side.
Step 4
Serve topped with apple compote and a drizzle of maple syrup.
