  • a handful of frozen edamame beans
  • 1 slice good-quality sourdough bread
  • 1 handful of rocket
  • 1 garlic
  • ½ of a 400g tin of chickpeas
  • 1 small and ripe avocados
  • ½ small red onions

Preparation

Step 1

Defrost the edamame: simply place in a small bowl and cover in boiling water, leave until softened for 3-5 minutes. Drain and discard the water.

Step 2

Toast the bread; while still warm, rub one side with a clove of peeled garlic, then cut into bite-size pieces. Set aside.

Step 3

To make the dressing, finely chop the rest of the clove of garlic. Place in a small bowl and whisk together with the balsamic vinegar, lemon juice, maple syrup and olive oil until well combined. Set aside.

Step 4

Assemble the salad. Toss the rocket with the chickpeas, avocado, onion, edamame, and chunks of sourdough. Toss with the dressing and serve, seasoning with salt to taste.
