- 150g dried pasta
- 6 oz sun-dried tomatoes
- 1 onion
- 2 cloves garlic
- 5 oz green olives
- 2 tablespoons tomato purée
- 1 tablespoon balsamic vinegar
- ½ lemons
- 1 large handful of basil
- pinch of sea salt

Preparation
Step 1
Cook the pasta in a pan of salted water, according packet instructions. Drain, reserving a little of the pasta water.
Step 2
Place a frying pan over medium heat and add a drizzle of the oil from the sun-dried tomato jar. Add the onion, garlic and a pinch of salt; cook for 5 minutes until soft.
Step 3
Add the chopped sun-dried tomatoes, olives, tomato purée and balsamic vinegar; cook for 5–10 more minutes.
Step 4
Add the drained pasta, a dash of the pasta water, lemon juice and chopped basil; mix well before serving.
