Ingredients
2 servings
- 1 head broccoli
- 2 servings of rice noodles
- 1 tablespoon toasted sesame oil
- 1 small red onion
- 2 cloves garlic
- 5.2 oz beansprouts
- 2 red peppers
- 2 tablespoons brown rice miso paste
- ½ lemons
- 1 tablespoon rice vinegar
- pinch of sea salt

Preparation
Step 1
Preheat the oven to 180°C fan / 400°F. Place the broccoli florets on a baking tray and drizzle with oil and salt; cook for 5–10 minutes until charred.
Step 2
Cook the noodles according to the packet instructions, then drain and rinse with cold water to prevent further cooking. Leave to one side.
Step 3
Place a frying pan or wok over medium heat and add a drizzle of sesame oil. Add the onion and garlic and cook for 5–10 minutes until soft.
Step 4
Add the beansprouts and peppers and cook for 5–10 minutes until soft.
Step 5
Stir through the remaining ingredients, including the noodles and broccoli, and cook for 2 minutes to warm through.
