- 3 tablespoons olive oil, divided
- 1 shallot, diced
- 2 tablespoons chopped fresh rosemary
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon Dijon
- 3 cloves garlic, minced
- Kosher salt and freshly ground black pepper, to taste
- 6 boneless, skinless chicken breasts
- 2 sprigs fresh rosemary

You can use fresh herbs instead of dried ones. Use 1 tablespoon fresh herbs for every 1 teaspoon dried herbs.
If you don’t have a grill, a cast iron grill pan or a large cast iron skillet will work beautifully.
