  • 1 (8-lb) bone-in, fully cooked, smoked ham, at room temperature
  • 1 cup brown sugar
  • ½ cup pineapple juice
  • ¼ cup honey
  • 1 tablespoon whole grain mustard
  • 1 tablespoon chopped fresh thyme leaves
  • 1 tablespoon chopped fresh rosemary
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • Freshly ground black pepper, to taste

Plan for 0.5 lb of ham per person. So for about 12 guests, a 4 – 6 lb ham is recommended.
Score the ham in a diamond pattern to allow the glaze to seep through and absorb more flavor.
Use an instant-read thermometer for accurate results. The internal temperature should reach 140°F.
Let your ham rest for at least 15 minutes prior to serving to allow the juices to redistribute.
