- 1/2 cup olive oil
- 1/4 cup vinegar (red wine, white wine, balsamic, or apple cider)
- 1 tablespoon Dijon mustard
- 1 tablespoon honey or maple syrup
- 1 garlic clove, minced
- 1/2 teaspoon salt
- Freshly ground black pepper, to taste

Preparation
Step 1
In a small bowl or jar, combine the vinegar, Dijon mustard, honey or maple syrup, minced garlic, salt, and pepper.
Step 2
Whisk together or shake the jar until the ingredients are well combined.
Step 3
Slowly drizzle in the olive oil while whisking continuously, or add the oil to the jar and shake until the dressing is emulsified.
Step 4
Taste and adjust the seasoning if necessary. Add more vinegar for acidity, honey for sweetness, or salt and pepper to taste.
Step 5
Serve immediately or store in the refrigerator for up to a week. Shake well before using.
