- 2 cups blanched almond flour
- 1/4 cup coconut oil, melted
- 1/4 cup honey or maple syrup
- 1/4 cup almond milk
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 3 ripe bananas, mashed

Preparation
Step 1
Preheat the oven to 350°F (175°C). Grease a loaf pan and line with parchment paper.

In a large bowl, whisk together the almond flour, baking soda, cinnamon, and salt.

In another bowl, beat the eggs. Add the melted coconut oil, honey, almond milk, and vanilla extract. Mix well.

Add the mashed bananas to the wet ingredients and stir until combined.

Pour the wet ingredients into the dry ingredients and mix until just combined.

Transfer the batter into the prepared loaf pan and smooth the top with a spatula.

Bake for 50 to 60 minutes or until a toothpick inserted into the center comes out clean.
