Preparation
Step 1
In a medium bowl, mash the ripe bananas until smooth.

Add the eggs and whisk until well combined with the bananas.

Stir in the oats until you have a batter.

Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or butter.

Pour 1/4 cup of batter for each pancake onto the skillet.

Cook until bubbles start to form on the surface, then flip and cook until golden brown on the other side.
