Ingredients

12-20 cookies
  • 1 1/2 cups cake flour (175g)
  • 1 1/2 cups all purpose flour (192g)
  • 3/4 tsp salt
  • 1 tsp baking soda
  • 1 cup unsalted butter, melted (220g)
  • 1 1/4 cups granulated sugar (250g)
  • 1/4 cup packed light brown sugar (50g)
  • 2 tsp vanilla extract
  • 1 large egg + 1 egg yolk
  • Sparkling sugar, for sprinkling on top

Do not skip chilling the dough. It gives cookies the perfect texture and enhances the flavor.
Cake flour is recommended for the perfect soft texture, but can be substituted with 1 1/4 cup all-purpose flour + 1 1/2 tablespoons of cornstarch if unavailable.
Sparkling sugar can be found at most grocery stores with cake decorating supplies.
The cookies stay fresh for up to 5 days in an airtight container at room temperature.
