  • For the Dates:
  • 12 dates, 4 ounces, pitted
  • ¼ cup dark rum
  • For the Ice Cream:
  • 1 cup whole milk
  • ⅔ cup granulated sugar
  • Large pinch of salt
  • 1¼ cups heavy cream
  • 6 egg yolks
  • ½ teaspoon vanilla extract
  • 2 tablespoons dark rum
  • 1 cup maple-glazed pecans, below
  • For the Maple-Glazed Pecans:
  • ⅓ cup maple syrup
  • 1 cup pecans, toasted and coarsely chopped
  • Big pinch of salt
