Ingredients

48 biscotti
  • 2¼ cups (281.25 g) all-purpose flour, plus more for dusting
  • ¼ cup (21.5 g) Dutch-process cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 12 ounces (340.2 g) semisweet chocolate chunks (about 2 cups)
  • 1½ cups (184.5 g) pistachios, shelled (about 8 ounces)
  • 4 large whole eggs, plus 1 large egg white, lightly beaten
  • 1½ cups (300 g) granulated sugar
  • Sanding sugar or granulated sugar, for sprinkling (optional)
