- 4 chicken thighs, bone-in and skin-on
- 1 cup crushed green olives
- 1 lemon, juiced
- 2 tablespoons olive oil
- 3 cloves garlic, minced

Preparation
Step 1
Preheat your oven to 375°F (190°C).

Season the chicken thighs with salt, pepper, and oregano.

In a large ovenproof skillet, heat olive oil over medium-high heat.

Add the chicken thighs, skin-side down, and sear until golden brown, about 5 minutes.

Flip the chicken thighs and add the crushed olives, lemon juice, and minced garlic to the skillet.

Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through.

Remove from the oven and garnish with fresh parsley before serving.
