  • 2 tablespoons olive oil, plus more for drizzling
  • 1/2 medium onion, thinly sliced or chopped
  • Kosher salt
  • 1 large bunch kale, preferably Lacinato/Tuscan kale
  • Crushed red pepper flakes
  • 8–10 large eggs, whisked to blend

You could add cheese to enhance the flavor, such as Parmesan or white cheddar.
For additional flavor, toss herbs with lemon juice and scatter them over the frittata at the end as a garnish.
