- 1 cup creamy peanut butter
- 2/3 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups old-fashioned oats (gluten-free if needed)
- 1 cup semi-sweet chocolate chips

Preparation
Step 1
Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.

In a large bowl, combine the peanut butter, brown sugar, eggs, and vanilla extract. Mix until smooth.

Add the baking soda and salt to the mixture and stir until combined.

Fold in the oats and chocolate chips until just incorporated.

Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheets. Flatten each cookie a bit with your hand or a spatula.

Bake for 10-12 minutes or until the edges are slightly golden. They may seem a bit underdone, but they will set up as they cool.
