- 3 cups old fashioned oats (can use gluten-free oats)
- 1/3 cup creamy peanut butter
- 1/3 cup honey
- 1/3 cup mini chocolate chips

Preparation
Step 1
Preheat oven to 325 degrees F. Line a large baking sheet with parchment paper and a Silpat baking mat and set aside.

Place the oats in a large bowl.
Step 3
In a small bowl or glass measuring cup, combine the peanut butter and honey. Heat in the microwave for 20-30 seconds. Stir until smooth.
Step 4
Pour the peanut butter and honey over the oats and stir until oats are well coated. If you aren't using salted peanut butter, you can add a little salt.
Step 5
Bake granola for 25-30 minutes, stirring once, or until granola is slightly golden brown.
Step 6
Let the granola cool completely on the baking sheet without stirring. When the granola is cool, stir in the mini chocolate chips.

Note-store the cooled granola in an airtight container or jar for up to 1 month.

Use old fashioned oats, not quick oats.
If using salted peanut butter, omit additional salt.
For a vegan version, substitute honey with maple syrup and use vegan chocolate chips.
Bake at a low temperature to avoid burning.
