- 5 oz arugula
- 2 cups cooked farro
- 3 medium ripe peaches, (pitted and sliced)
- 1 cup blackberries
- 1 cup diced cucumber
- 1 avocado, (chopped)
- 1/2 cup feta cheese or goat cheese
- 1/2 cup chopped pecans or almonds
- 1/4 cup thinly sliced red onion
- 2 tablespoons chopped mint
- 2 tablespoons chopped basil
- 1/3 cup olive oil or avocado oil
- Zest of 1 lime
- 2 tablespoons lime juice
- 2 tablespoons honey
- 1 tablespoon red wine vinegar
- 1 small shallot, (minced)
- 1 clove garlic, (minced)
- Kosher salt and pepper, (to taste)

Preparation
Step 1
In a large bowl or on a large platter, combine the arugula, cooked farro, peaches, blackberries, cucumber, avocado, cheese, nuts, onion, and herbs.
Step 2
In a small bowl or in a glass jar, whisk together the oil, lime zest, lime juice, honey, red wine vinegar, shallot, garlic, salt, and pepper.
Step 3
Pour the dressing over the salad and gently toss together until the salad is well coated. Serve.
