  • 1/4 cup low-sodium chicken or vegetable broth
  • 1 tbsp Rice vinegar
  • 2 cloves garlic, minced
  • 1 -inch knob of fresh ginger, peeled and finely grated
  • 2 lbs boneless, skinless chicken breasts
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp arrowroot flour
  • 3 tbsp avocado oil
  • 1 tsp toasted sesame oil
  • 1 large green bell pepper, seeds and core removed and cut into 1 inch cubes
  • 1 large red bell pepper, seeds and core removed and cut into 1 inch cubes
  • 1 large jalapeno, seeds removed and diced
  • 1/2 medium white onion, diced
