Ingredients

2 servings
  • 3-4 tbsp avocado oil (or more as needed)
  • 16 ounces baby spinach (fresh not frozen)
  • 2 cloves garlic (minced)
  • ½ tsp crushed red pepper flakes (optional)
  • ½ cup unsweetened (full fat coconut milk)
  • ¼ cup low-sodium vegetable or chicken broth
  • 1 tbsp arrowroot flour
  • Juice of ½ lemon
  • Kosher salt (to taste)
  • Freshly ground black pepper (to taste)
