- 1/4 cup (50 grams) granulated sugar
- 1/4 teaspoon freshly grated lemon zest
- 1/8 teaspoon table salt
- 1/2 cup (4 ounces or 115 grams) unsalted butter, cut into chunks
- 1 cup (125 grams) flour
- 1 cup (about 5 ounces or 140 grams) raspberries
- 2 large eggs
- 3/4 cup (150 grams) granulated sugar
- 1/4 cup freshly squeezed lemon juice (from about 2 lemons)
- 1/3 cup (40 grams) all-purpose flour
- Confectioners’ sugar, for dusting

The bars are not overly sweet and have a subtle raspberry flavor with a pale pink color. The color may vary depending on the raspberries used.
If your raspberry puree seems too saturated, you can adjust the amount of lemon juice accordingly. Keep the total liquid (lemon juice + raspberry puree) at 7 tablespoons.
Extra raspberry puree can be used in yogurt, smoothies, or with ice cream.
Store the bars in the fridge for up to a week.
