Frico Grilled Cheese Sandwich

Ingredients
1 sandwich
- 2 slices bread of your choice (I’m using a hearty country wheat bread), sliced 1/2-inch thick
- 2 teaspoons butter, salted or unsalted
- 1/2 cup (2 ounces) coarsely grated cheddar, plus more to taste

Preparation
Step 1
Spread butter on one side of each slice of bread, the one that will be on the outside of the sandwich.
Step 2
Scatter all but 2 tablespoons of the cheese on the unbuttered side of one slice.
Step 3
Top with the second slice, so that the buttered side faces out.
Step 4
Heat skillet — I like to use a well-seasoned cast iron frying pan here — over low-to-moderate heat.
Step 5
Sprinkle 1 tablespoon cheese roughly in the center of the skillet.
Step 6
Place the sandwich on top.
Step 7
Cook sandwich until golden underneath and cheese browns and crisps, about 2 to 4 minutes.
Step 8
Carefully lift melted (frico-ed) cheese and bread onto spatula, sprinkle remaining spoonful of cheese back in skillet, then flip sandwich over on top of it.
Step 9
Cook on the second side until golden and crisp as well, pressing down on it with the spatula to encourage it to all come together.
Step 10
Transfer to a plate, cut in half if desired, and dig in.

A purist may enjoy the classic flavor, but you can experiment with variations like adding a thin slice of tomato or a schmear of Dijon mustard.
