- 3 medium potatoes, peeled and grated
- 2 tablespoons olive oil
- Salt and pepper to taste
- ½ cup diced bacon
- 1 cup shredded cheddar cheese
- ½ cup chopped parsley
- 4 large eggs
- 1 cup milk
- 1 teaspoon garlic powder

Preparation
Step 1
Preheat oven to 375°F (190°C).
Step 2
Grease a 10-inch cast iron skillet with olive oil.
Step 3
Spread grated potatoes evenly over the bottom and up the sides of the skillet. Press down firmly to form a crust.

Bake in the preheated oven for about 15 minutes until the potatoes are slightly golden and crisp.

In a skillet, cook bacon over medium heat until crispy. Drain on paper towels.

Sprinkle half of the cheese over the baked potato crust, followed by the bacon and parsley.

In a bowl, whisk together eggs, milk, garlic powder, salt, and pepper. Pour over the bacon and cheese.

Sprinkle the remaining cheese on top.

Bake for 30-35 minutes until the center is set and the top is golden brown.

Let it cool for a few minutes before slicing and serving.
