- 3/4 lbs fettuccine pasta, (or angel hair or vermicelli pasta)
- 1 lb white mushrooms, thickly sliced
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 3 1/2 cups half and half
- 1/4 cup parsley, finely chopped, plus more for garnish
- 1 tsp sea salt, or to taste, plus more for pasta water
- 1/4 tsp black pepper, or to taste
- 3 Tbsp olive oil, divided
- 1 Tbsp unsalted butter
