- coconut sugar
- cumin
- cinnamon

- beets
- vegetable broth, or water
- mixed greens
- lemon juice
- salt
- parmesan cheese, or nutritional yeast

Preparation
Step 1
In a large pot over medium heat add oil, peppers, onion, and garlic.
Step 2
Stir in lentils, followed by sugar and all spices.
Step 3
Stir in peas, beets, and vegetable broth (or water). Turn heat to high.
Step 4
Bring to a boil, cover, and reduce to simmer.
Step 5
Stir in mixed greens, lemon juice.
Step 6
Optionally, garnish with a sprinkle of shredded parmesan cheese or nutritional yeast. Enjoy!
