- ¾ cup quick oats (quick-cooking rolled oats)
- ½ cup cacao powder (or cocoa powder)
- 2 scoops vanilla protein powder (approximately 60 grams)
- 2 tablespoons granulated sugar (or any sweetener of choice)
- ¼ teaspoon salt
- 1 cup brewed coffee (cooled, not hot)
- 2 tablespoons chocolate chips of choice (I like to use dark chocolate)
- flaked or coarse salt (for sprinkling)

Preparation
Step 1
In a large mixing bowl combine the oats, cacao powder, protein powder, sugar and salt. Mix well.
Step 2
Add the brewed coffee then mix until well combined and you have a uniform dough.
Step 3
Press the protein bar batter into a 9x5" loaf pan lined with parchment paper.
Step 4
Chill the batter in the refrigerator for at least one hour.
Step 5
Melt the chocolate chips in a double boiler or the microwave until completely melted.
Step 6
Remove the batter from the refrigerator, then slice into bars.
Step 7
Drizzle the bars with the melted chocolate, then sprinkle them with salt. The chocolate should set rather quickly since the bars are chilled.
Step 8
Serve and enjoy!

Store the bars in an airtight container in the refrigerator for up to one week.
