Ingredients
- squash
- olive oil
- bell pepper
- red onion
- garlic cloves
- black pepper
- cayenne pepper
- plain yogurt
- cheddar cheese
- cumin seeds
- chili powder
- salt
- ground oregano
- cilantro
- bay leaf

Preparation
Step 1
Boil or steam cubed butternut squash until tender. Place into a food processor or blender.
Step 2
Blend until you have a smooth puree. Pour into a mixing bowl, then set aside.
Step 3
Saute onions, bell pepper, and garlic for 10 minutes.
Step 4
Add cayenne and black pepper, then saute a few minutes longer.
Step 5
Pour saute mixture into the butternut squash puree you set aside.
Step 6
Add yogurt and spices.
Step 7
Add cheese and stir until all is well combined.
Step 8
Top with more cheese + cilantro. Bake and enjoy!
