Ingredients
4-6 servings
- 1 large (~0.5 pound) fennel bulb
- 1 large Honeycrisp apple
- 1 ounce block of Parmesan cheese
- 4 ounces baby arugula
- 1/2 cup finely-chopped candied pecans, homemade or store-bought
- 1/3 cup julienned fresh basil leaves
- 1 batch shallot vinaigrette

Preparation
Step 1
Shave the fennel, apple, and Parmesan using a mandoline or a sharp knife. Optionally chop 2 tablespoons of the fennel fronds to add to the salad.
Step 2
In a large mixing bowl, combine the chopped fennel, apple, Parmesan, arugula, candied pecans, basil, and vinaigrette. Gently toss until combined.
Step 3
Serve immediately and enjoy!

Use a cut-resistant glove with a mandoline for safety.
If you don’t own a mandoline, use a sharp knife to slice the ingredients.
Slice the apple last to prevent browning. Prepare other ingredients up to 4 hours in advance but keep the dressing separate until serving.
