- 1 pound beef chuck, cut into bite-sized pieces
- Salt and pepper to taste
- 1 onion, thinly sliced
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 3 cups beef broth
- 2 cups water
- 1 cup kimchi, chopped
- 2 tablespoons gochujang (Korean chili paste)
- 200g noodles of choice
- 2 green onions, chopped
- 1 tablespoon sesame oil
- Sesame seeds for garnish

Preparation
Step 1
Heat the vegetable oil in a large pot over medium-high heat.
Step 2
Season the beef pieces with salt and pepper, then add to the pot.

Brown the beef on all sides, then remove from the pot and set aside.

In the same pot, add the sliced onion, garlic, and ginger, sautéing until fragrant.

Return the beef to the pot, then add beef broth, water, kimchi, and gochujang.

Bring to a boil, then reduce the heat and simmer for 1 hour or until beef is tender.

Cook the noodles according to package instructions and set aside.

Add the cooked noodles to the soup, stirring gently.

Finish with green onions and sesame oil.
