Lay the bell pepper on its side on a cutting board. Use a knife to slice off the very top (stem-end) and bottom of the bell pepper. Run the knife around the inside of the flesh to cut away the core. Discard the core. Then dice the bell pepper into your desired size of pieces.

Then thinly slice the bell pepper into long strips.
