Ingredients
5 servings
- 3 cups rolled oats- organic, gluten-free if preferred ( or sub quinoa flakes)
- 1 ½ cups nuts (or seeds)- sliced almonds, pecans, walnuts or sub-pumpkin seeds or sesame seeds
- 1 cup coconut flakes- or replace with oats and/or nuts
- 2 tablespoons chia seeds -or sub flax seeds
- ¼ cup cacao powder
- ¼ cup cacao nibs ( see notes)
- 1 teaspoon organic Ceylon cinnamon
- ¾ teaspoon sea salt
- ⅓ cup maple syrup, more to taste
- ⅓ cup olive oil or melted coconut oil
- 1 teaspoon vanilla extract

Preparation
Step 1
Preheat oven to 325F
Step 2
In a large bowl, mix oats, nuts ( or seeds), coconut flakes, chia seeds, cacao powder, cacao nibs, cinnamon, and salt together.
Step 3
Pour the maple syrup, oil and vanilla to the dry ingredients and toss to coat well.
Step 4
Taste. If you want it sweeter, add a tablespoon or two more of maple syrup.
Step 5
Spread out on a parchment lined baking sheet pan.
Step 6
Bake: place the sheet pan on the middle rack of the oven. Bake for 12 minutes, then toss everything well. To create clumps, press the granola down hard onto the sheet pan using a metal spatula. Continue baking 12 minutes. Remove from oven and let cool down completely. Break apart into clumps.
Step 7
Serve with fresh berries, and yogurt or milk.
