  • 3 TB Olive Oil
  • 1 medium Shallot, diced (about 1/2 cup)
  • 3 Garlic Cloves, minced
  • 1 tsp Crushed Red Pepper Flakes (cut in half if you don’t want it too spicy)
  • 1/2 cup Tomato Paste
  • 2 TB Vodka
  • 1 1/4 cups Heavy Cream
  • Kosher Salt
  • 1 pound Pasta
  • Grated Parmesan Cheese
  • Chopped Basil

Preparation

Step 1

Heat olive oil in a large pan over medium-low heat.

Step 2

Sauté shallot for 2-3 minutes then add in garlic, crushed red pepper, and a little salt.

Step 3

Add in tomato paste and sauté for 5 minutes, until the paste has darkened a bit.

Step 4

Pour in vodka and cook down for a minute then stir in heavy cream.

Step 5

Simmer for a few minutes and season with kosher salt.

Step 6

Boil pasta just a couple minutes under al dente, and reserve a cup or so of pasta water.

Step 7

Toss pasta with the sauce, add in a little pasta water until you have a nice glossy sauce and the pasta is al dente. Finish with parmesan cheese and basil.
