  • 7 fl oz coconut milk
  • 1 tablespoon ground turmeric
  • 3½ tablespoons maple syrup
  • 1 lime
  • 1 tablespoon melted coconut oil

Preparation

Step 1

Place the flour, coconut milk, turmeric, maple syrup and lime juice into a bowl and whisk well until a smooth batter has formed.

Step 2

Heat some coconut oil in a pan over medium heat. Once warm, pour in some of the mixture and leave to cook for 2–3 minutes.

Step 3

Once the mixture has browned on the bottom, flip it over and cook on the other side for 3–4 minutes until cooked through. Repeat until all of the batter has been used.

Step 4

Serve with a sprinkle of coconut sugar, a squeeze of lime juice, a dollop of coconut yoghurt and a small handful of coconut chips.
