Ingredients

- 240g canned chickpeas
- 2 sweet potatoes
- ½ teaspoon ground turmeric
- 1 teaspoon ground cinnamon
- 1 red pepper
- 1 small cauliflower
- 3 tablespoons coconut yoghurt
- 1 lime
- 1 handful of parsley
- drizzle of olive oil
- pinch of sea salt

Preparation
Step 1
Preheat oven to 190°C fan / 375°F. Place the drained chickpeas and sweet potato chunks on a large baking tray and drizzle with olive oil, turmeric, cinnamon and a sprinkling of salt. Mix well and cook for 20 minutes.
Step 2
After 20 minutes, remove the tray from the oven and mix in the red pepper and cauliflower. Return to the oven and cook for a further 15–20 minutes until the sweet potato and cauliflower soften.
Step 3
When cooked, remove from the oven and mix through the yoghurt, lime juice and a handful of chopped parsley.
