  • 300g macaroni pasta
  • 4 cloves garlic
  • 7 oz cherry tomatoes

Preparation

Step 1

Cook the macaroni pasta according to packet instructions. Once cooked, drain and leave aside until needed.

Step 2

Make the white sauce by placing the tapioca flour, lemon juice, nutritional yeast, mustard, almond milk and a sprinkling of salt in a pan over medium heat. Continuously whisk the mixture to ensure it stays smooth and no lumps form. You may want to add another splash of almond milk if the mixture becomes too thick.

Step 3

Place another large pan over medium heat and add a drizzle of olive oil. Once warm, add the chopped garlic, tomatoes and a sprinkling of salt. Mix well and cook for 10 minutes until the tomatoes become really soft and begin to bubble.

Step 4

Lastly, mix through the drained pasta, white sauce and chopped basil, then serve.
