- 2 large sweet potatoes
- 1.8 oz sun-dried tomatoes
- Handful of mixed leaves
- 2 tablespoons sunflower seeds
- pinch of dried red chilli flakes
- pinch of sea salt
- pinch of sea salt & black pepper
- drizzle of olive oil

Preparation
Step 1
Preheat the oven to 180C (350F), fan setting.
Step 2
Place the sweet potatoes onto a baking tray and drizzle with olive oil and a pinch of salt. Cook for 40 minutes until soft. Once cooked, remove from the oven and spoon into a large bowl.
Step 3
Add the sun-dried tomatoes, sunflower seeds and mixed leaves into the bowl and mix well.
Step 4
In a small bowl, mix together all of the dressing ingredients until a smooth dressing forms. Pour the dressing into the large bowl and mix well until everything is coated.
Step 5
Spoon the salad into bowls and top with a crack of pepper and a pinch of chilli flakes (if using).
