Ingredients
2 servings
- 1–2 sweet potatoes
- 1 small red onion
- pinch of ground cumin
- 1 x 340g can sweetcorn
- small bunch of chives
- pinch of dried red chilli flakes
- pinch of sea salt
- pinch of sea salt & black pepper
- dollop of coconut yoghurt
- 1 ripe avocados
- 1 tablespoon olive oil
- 2 pieces of toasted bread

Preparation
Step 1
Preheat oven to 190C (375F) fan setting.
Step 2
Place the sweet potatoes and onion pieces in a baking pan with the drained sweetcorn.
Step 3
Drizzle over some olive oil, a sprinkle of cumin, salt and pepper and give it all a really good mix to make sure everything is coated.
Step 4
Bake in the oven for 35-40 minutes until golden, giving everything a good stir halfway through to cook evenly.
Step 5
Once cooked, remove from the oven and stir through the chopped chives and chilli flakes.
Step 6
Serve with some sliced avocado, toasted bread and coconut yogurt.
