  • 1 tablespoon olive oil
  • 4 cloves garlic
  • 2 teaspoons of ground cumin
  • pinch of sea salt & black pepper
  • 1 large head broccoli
  • 20 fl oz water
  • 2 handfuls of spinach
  • 240g canned cannellini beans
  • handful of coriander
  • 1 lemon

Preparation

Step 1

Place a pan over a medium heat and add some olive oil.

Step 2

Once warm, add the garlic, cumin and a pinch of salt and pepper, cook for 1-2 minutes until soft.

Step 3

Add the broccoli and cook until tender, about 10-15 minutes.

Step 4

Add the rest of the ingredients and bring to the boil. Once boiling, reduce the temperature and cook for a final 10 minutes.

Step 5

Once cooked, blend the soup until smooth.
