  • 150g dried pasta
  • 1 courgette
  • 2 cloves garlic
  • ½ lemons
  • 7 oz spinach
  • 4.2 fl oz almond milk
  • 5 oz peas (frozen/fresh)
  • 1 tablespoon olive oil
  • pinch of sea salt
  • 1 teaspoon of nutritional yeast

Preparation

Step 1

Preheat oven to 180C (355F), fan setting.

Step 2

Place the courgette on a baking tray with a drizzle of olive oil and salt, cook for 10 minutes.

Step 3

After 10 minutes, add the garlic and roast for another 5-10 minutes until golden, before removing from the oven and leaving to one side.

Step 4

Put the pasta in a pan of boiling water and cook according to the instructions on the pack. Once cooked, drain and leave to one side.

Step 5

To make the sauce, place the almond milk, spinach and salt in a large pan over a medium heat and cook until the spinach has wilted. Once wilted, add the roasted garlic and blend using a hand blender or pour into a normal blender and blitz until smooth - if you’re adding nutritional yeast, add it now before blending.

Step 6

Add the courgettes, peas, lemon juice and cooked pasta to the pan and mix through well. Cook for another few minutes until everything is heated through.
