Ingredients
4 servings
- 300g pasta
- 100g medium–firm tofu
- 120ml oat milk
- 1 tablespoon olive oil
- 2 teaspoons nutritional yeast
- 1 clove garlic
- ½ teaspoon smooth Dijon mustard
- pinch turmeric
- 1 lemon
- 1 yellow pepper
- 1 x 10 oz tin sweetcorn
- handful watercress
- pinch of dried red chilli flakes

Preparation
Step 1
Cook the pasta according to the pack instructions. Drain, pour into a large bowl and set aside.
Step 2
Add the tofu, oat milk, 1 tablespoon olive oil, nutritional yeast, garlic, mustard, turmeric, lemon zest and juice, along with a large pinch of sea salt, into a high-speed blender and blitz into a creamy sauce.
Step 3
Mix the pasta with the sunshine sauce, yellow pepper and sweetcorn, tossing to combine. Check the seasoning, adding a little more salt if needed.
Step 4
Divide into bowls and top with watercress, a drizzle of oil and pinch of chilli flakes.
