  • 1 x 9 oz block firm tofu

Preparation

Step 1

Halve the red onion and cut each ½ into quarters. Cut the peppers into bite-sized chunks. Drain and pat dry the tofu, before cutting into bite-sized chunks. Slice the courgette widthways into bite-sized chunks.

Step 2

Once all of the skewer ingredients are prepared, mix together the marinade ingredients and pour into a large baking tray. Add all of the vegetables and tofu; mix well until everything is coated. Cover and leave to marinate in the fridge for at least 1 hour.

Step 3

In a small bowl, mix together the harissa sauce ingredients until smooth. Cover and place in the fridge until ready to serve.

Step 4

When ready to cook, thread the marinated chunks of vegetables and tofu onto 5 skewers. Place a large frying pan over a medium–high heat and add a drizzle of olive oil (or cook on the barbecue). Once warm, add the skewers (if your pan is small you may have to do these in batches) and cook for 5–8 minutes on each side, until charred on the outside and cooked through. Serve with the harissa sauce drizzled over the top.
