- 750g Maris Piper potatoes
- 1-3 sliced red chillies
- 2 cloves garlic
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon ground turmeric
- ½ teaspoon cayenne pepper
- handful of coriander
- 1 tablespoon plain flour
- 1/2 limes
- drizzle of olive oil
- Large pinch of sea salt
- pinch of sea salt & black pepper

Preparation
Step 1
Peel and quarter the potatoes and place into a saucepan of water with a pinch of salt. Bring to the boil and simmer for 25 minutes until cooked. Once cooked, drain and leave to cool.
Step 2
While the potatoes are cooking, heat a drizzle of olive oil in a frying pan over a medium heat. Once warm, add the chilli and garlic and cook for 2 minutes.
Step 3
Add the cumin, paprika, turmeric and cayenne pepper and sizzle for 30 seconds, then take off the heat.
Step 4
Once the potatoes have cooled, mash them in a bowl. Once mashed, add the spice and garlic mixture, chopped coriander, plain flour, lime juice and a pinch of salt and pepper. Mash again until the mixture comes together.
Step 5
Shape the mixture into 8 patties.
Step 6
Once ready to cook, preheat the oven to 180C (350F), fan setting.
Step 7
Place a pan over a medium heat and add a drizzle of olive oil. Once warm, pan fry the patties on both sides for about 2 minutes, until golden, then place onto a baking tray. Drizzle with a little more olive oil and bake for 25–30 minutes, turning halfway, until they are golden brown.
