- 3 large parsnips
- 1 onion
- 2 cloves garlic
- 1 tablespoon ground cumin
- 500ml plant-based milk
- 2 tablespoons coconut yoghurt
- 1 tablespoon olive oil
- pinch of sea salt
- pinch of sea salt & black pepper

Preparation
Step 1
Place the parsnips into a pan over a medium heat and cover with the boiling water. Cook for 15-20 minutes until soft. Once soft, drain the water.
Step 2
Place the onion and garlic in a pan over a medium heat. Add a drizzle of olive oil and cook for 5-10 minutes until soft.
Step 3
Once the onions are soft, add in the drained parsnips and ground cumin. Stir together and cook for another 2 minutes.
Step 4
Add in the almond milk, yogurt, salt and pepper. Mix well and cook for another couple of minutes.
Step 5
Either pour the mixture into a blender or use a hand blender in the pan to blitz the soup together until smooth.
Step 6
Pour the soup back into the pan (if using a blender) and heat for a couple of minutes before serving. You may want to add a dash more almond milk if the soup is too thick.
