  • 1 x 12 oz tin sweetcorn
  • 1 onion
  • 2 cloves garlic
  • 1 teaspoon paprika
  • 2 large carrots
  • 1.8 oz gram flour
  • 2 tablespoons plain flour
  • drizzle of olive oil
  • pinch of sea salt

Preparation

Step 1

Place the drained sweetcorn into a powerful blender and blitz until the mixture forms a thick paste. Set aside until needed.

Step 2

Place a large pan over medium heat and add a drizzle of olive oil. Once warm, add the diced onion, garlic and a pinch of salt. Mix well and cook for 5–10 minutes until soft. Then add the paprika and grated carrots. Mix well and cook for another 5 minutes, or until the carrots start to soften.

Step 3

Mix through the blended sweetcorn, gram flour and plain flour to form a thick batter. Place in the fridge to firm up (for anywhere up to 1 hour).

Step 4

While the fritter mixture cools, make the sauce by mixing together all of the ingredients in a small bowl until smooth.

Step 5

Once the fritter mixture has completely firmed up, scoop out large spoonfuls of the mixture and form into patty shapes using your hands. The mixture should make around 12 fritters.

Step 6

Once you are ready to cook the fritters. Place a large pan over medium heat and add a drizzle of olive oil. Once warm, place 3–4 fritters in the pan and cook for a few minutes on each side until golden on the outside and cooked through (around 3–4 minutes per side). Repeat until all of the fritters are cooked. Serve the fritters piping hot, with a side of the lemon tahini sauce.
