  • 2 slices sourdough bread
  • ½ avocados
  • 1 tomato
  • 1 heaped tablespoon kimchi
  • 4 slices of jalapeños
  • drizzle of olive oil
  • pinch of flaky sea salt

Preparation

Step 1

Lightly drizzle one side of each slice of bread with olive oil (this will be the outside of the toastie).

Step 2

Take one slice of bread (olive oil side on the outside) and layer on the avocado, tomato, kimchi and jalapeños (if using). Season with a pinch of salt and top with the other slice of bread.

Step 3

Warm a medium frying pan over medium-low heat, then add the toastie. Press down gently using a toastie press, or a clean saucepan lid that fits inside the pan. Cook for 3–4 minutes on each side until crisp and golden.

Step 4

Slice in half before serving. Delicious with a mug of soup, a crunchy slaw or a green salad.
