- 1 tablespoon olive oil
- 9 oz Portobello mushrooms
- ½ teaspoon paprika
- 1 teaspoon dried oregano
- 1 tablespoon soy sauce/tamari

Preparation
Step 1
Put the oil in a frying pan over high heat; add the mushrooms and fry for 4–5 minutes until golden and most of the liquid has evaporated. Add the paprika, oregano and soy sauce/tamari and fry for 1 minute until the mushrooms are coated and sticky. Set aside until needed.
Step 2
Combine the garlic with coconut yoghurt in a bowl; season with salt and a good crack of black pepper. Heat the flatbreads in a dry pan or microwave.
Step 3
To serve, take a warm flatbread, slather on the garlic yoghurt, pile up the cucumber, and salad leaves, then top with the golden mushrooms.
