- 1 cauliflower
- 2 tablespoons pumpkin seeds
- 2 tablespoons sunflower seeds
- 1 teaspoon dried red chilli flakes
- 1 handful of coriander

Preparation
Step 1
Preheat the oven to 180°C fan / 400°F. Slice the cauliflower into 2 steaks about 4cm / 1½″ thick — use the middle part as it’s larger and save the remainder for another dish.
Step 2
In a small bowl, mix 4 tablespoons of the olive oil with the paprika, miso paste, vinegar, soy sauce and maple syrup; brush ¼ of the mixture over both sides of the cauliflower steaks. Place the steaks on a flat baking tray lined with baking parchment and bake for 15 minutes. Turn over and bake for another 15 minutes until tender but with a little bite.
Step 3
Remove from the oven and brush another ¼ of the sauce over the steaks.
Step 4
Place the remaining sauce and 2 tablespoons of olive oil in a frying pan, over medium heat. Add the sunflower seeds, pumpkin seeds and chilli flakes; fry for 2 minutes until it smells toasty.
Step 5
Serve the cauliflower steaks topped with the seedy chilli oil and a sprinkle of coriander.
