Ingredients
2 servings
- 1 onion
- 3 cloves garlic
- small chunk of ginger
- ½ teaspoon ground turmeric
- 1 teaspoon ground cumin
- 240g canned chickpeas
- 3.5 oz frozen edamame beans
- 3.5 oz spinach
- 4 tablespoons coconut yoghurt
- 1 lemon
- 2 tablespoons tahini
- drizzle of olive oil
- pinch of sea salt & black pepper

Preparation
Step 1
Warm a large sauté pan over medium heat and add a drizzle of olive oil. Add the onion, garlic, ginger and a pinch of salt. Cook for 10 minutes until softened.
Step 2
Add the turmeric and cumin, cook for 1 minute.
Step 3
Stir in the chickpeas, edamame beans, spinach, coconut yoghurt, lemon juice and tahini. Simmer for 5 minutes, stirring often, until the edamame beans are tender. Season to taste.
