Ingredients

- 1 onion
- 2 cloves garlic
- 1.8 oz sunflower seeds
- 2.8 oz cashews
- 300g macaroni pasta
- 7 fl oz oat milk
- 1 teaspoon smooth Dijon mustard
- 2 tablespoons olive oil
- 1 lemon
- 4 tablespoons nutritional yeast
- 1 teaspoon maple syrup
- pinch of sea salt & black pepper

Preparation
Step 1
Drizzle some olive oil into a saucepan and add the onion; fry for 5–6 minutes until softened. Add the garlic and fry for 30 seconds until fragrant. Remove from the pan and place into a high-speed blender. In a bowl, combine the sunflower seeds and cashews; cover with boiling water until needed.
Step 2
Fill a saucepan with water, add a pinch of salt and bring to the boil before turning down to a simmer; cook the pasta according to packet instructions.
Step 3
Drain the sunflower seeds and cashews and add to the blender with the onions and garlic; add the oat milk, mustard, olive oil, lemon juice, nutritional yeast and maple syrup. Blitz into a smooth sauce. Pour over the macaroni, season with salt and plenty of black pepper, before serving.
