- 2 packs cherry tomatoes
- 1 red onion
- 3 sprigs thyme
- 1 tablespoon olive oil
- 1 tablespoon red wine vinegar
- 1 tablespoon maple syrup
- 1 x 14 oz tin butter beans
- 2 cloves garlic
- pinch of flaky sea salt

Preparation
Step 1
Preheat the oven to 180°C fan / 400°F. Place all of the tomato filling ingredients in a medium baking dish (25 x 15 x 15cm / 10 x 6 x 6″) and toss together.
Step 2
For the crumble topping, mix the flour, oats and seeds together in a bowl, then add the oil and a pinch of flaky sea salt. Mix and rub in-between your fingertips until it resembles a crumb texture; squeeze some of the mixture together to form larger clumps.
Step 3
Sprinkle the crumble over the top of the tomato mixture and bake for 45 minutes, until the tomatoes have softened and the crumble is golden.
