- 1.6 lb new potatoes
- 3 tablespoons olive oil
- 6 tablespoons apple cider vinegar
- 1 teaspoon maple syrup
- 1 teaspoon flaky sea salt
- 1 handful of parsley

Preparation
Step 1
Preheat the oven to 220°C / 200°C fan.
Step 2
Put the potatoes, olive oil, maple syrup and 3 tablespoons of apple cider vinegar and a teaspoon of salt into a large bowl, toss to coat and then tip out onto an oiled baking tray. The majority of the potatoes should be cut side down on the tray for maximum caramelisation.
Step 3
Cook for 25 minutes until soft and golden.
Step 4
Once golden, remove from the oven, turn the potatoes over and crush each potato using the back of a fork. Drizzle with the remaining 3 tablespoons of apple cider vinegar and put back in the oven for a further 10 minutes.
Step 5
Once cooked, crispy and dark brown in places, remove from the oven and sprinkle with fresh parsley and flaky sea salt to taste.
